
Mushroom toasties
Ingredients
2 toasted bread slices
100 g mushrooms
1 knob of butter
2 shallots
1 garlic clove
4 sprigs of parsley
1 teaspoon lemon juice
Freshly ground black pepper and salt
Instructions
Finely chop the shallots, mushrooms and parsley then crush the garlic with the blade of your knife and chop it. Heat the butter in a saucepan over a medium heat then add the mushrooms and the shallots.
Cook them until golden and season with salt and pepper, adding the parsley and the garlic just 30 seconds before ready. Spread the mushroom topping on the toasts and squeeze over a bit of lemon juice.
